  • ½ medium head of cabbage, chopped

  • 1 cup celery, diced

  • 1 cup onion, diced

  • 1 cup carrots, diced

  • 1 green bell pepper, diced

  • 2 cloves garlic, minced

  • 4 cups vegetable or chicken broth

  • 1 can (14 oz) diced tomatoes, with juice

  • 1 tsp black pepper

  • ½ tsp oregano

  • ¼ tsp red pepper flakes (optional)

  • Salt, to taste

Directions

  • Wash and chop all the vegetables.
  • Heat a large pot over medium heat. Add a small amount of oil or cooking spray.
    Sauté the celery, onions, and bell pepper for 5-7 minutes until softened.
  • Stir in the minced garlic and cook for 1-2 minutes until fragrant.
  • Pour in the broth and the diced tomatoes with their juice. Stir well.
  • Stir in the chopped cabbage and carrots. Mix everything together.
  • Bring the soup to a boil. Reduce the heat to low and simmer for 25-30 minutes until vegetables are tender.
  • Add black pepper, oregano, red pepper flakes, and salt as desired.
